This delightful hojicha is made by roasting the green tea stems. Although the roasting is looks fairly heavy the resulting tea is sweet and smooth with a wonderful well rounded and balanced flavour.
The stems used to create this hojicha come from the farms award winning Kamairicha production.
Issin-en focuses on working with nature rather than against it. The teas are all grown with a deep respect for their surrounding environment and the biodiversity found around their tea fields.
The farm produce all of their own fertilisers and investigate the soils by sending small samples of each fields to a lab each year. They then can decide how much we to use in each field. They only use plant-based ingredients for homemade fertilisers, which give the teas a clear taste.
