This Matcha Hatsu Mukashi from Nishide is a "modern" heritage grade. The centuries old canopy method is used keepng to tradition of the highest quality matcha cultivation however rather than traditional Honzu reeds, the material used is a fine mesh fabric. This more modern style of canopy shading is known as Kanreisha.
The tencha tea leaves are blended and refined by Nishide-san and are ground into fine matcha powder at his partner's matcha stone mill factory. The tea leaves themselves are shaded under canopy for around 40 days (varies from year to year) for an extra rich savoury umami flavour.

About the producers: Nishide Tea Factory is managed by husband and wife team, Takashi and Atsuko Nishide with their family. The factory was established over 140 years ago, the Nishide family buys aracha, unrefined tea leaves, from several partner tea farmers in Kyoto and surrounding prefectures, and refines them further to craft high quality tea leaves that are uniform in colour, shape, and of course excellent in flavour.
