Shiokaze Matcha from Sonogi, Nagosaki

This matcha is named after the terroir where it is grown. Higashi Sonogi is in the hills above Omura bay in Nagasaki. The name Shio Kaze taken from the kanji 潮風 meaning sea breeze.
This experimental matcha has been created with a new machine, which the farmer has helped develop, that both steams and pan roasts the leaves at the same time resulting in a nutty flavour and aroma.
This matcha has rich nutty and almost dark chocolate like aroma with mellow umami and mild bitter flavours.

About the farmer: Chayou is currently run by the second generation tea master, Matsuo Masatoshi. In addition to being a multi-award winner of the minister's award given to winning teas at tea competition, Matsuo Masatoshi has also won the prestigious emperor's cup, chosen by the government each year from all farms across Japanese agriculture industry.
