These tea leaves from Azuma tea garden where originally cultivated to become tencha (the tea leaf used to make matcha). As an experiment Azuma decided to sun dry the leaves to create this white tea Ā 

Steeping Notes: 5g | 200ml | 80°C | 1mins 

These tea leaves are suitable for many infusions. Extend the brewing time and raise the temperature over each infusion.Ā

About The Growers:Ā The Azuma Tea Garden is a family-operated, fourth-generation farm specializing in Tencha tea leaf cultivation and processing. Founded in the late 19th century the family manages tea fields in the mountains of Wazuka, Kyoto, Japan. While not fully certified organic yet, they are in the process of converting to organic cultivation.

"Wazuka-cho in Kyoto is known as the main production region of Uji tea. Surrounded by mountains, river, clean air and rich soil, Wazuka is a region suited for growing tea. Our tea fields are located in the eastern part of Wazuka-cho, where neither trains nor major road runs. The scenery of endless tea fields is designated as Kyoto's "cultural landscape"

Delicately quaffable

Super clean tasting White Tea. The leaves smell like an early autumn woodland. The first brew, as per guidelines, is light and delicate in flavour with repeated brews deepening the colour and increasing the tannins. I feel three brews (last at 90 degrees for 3 mins) is about it before your tongue tells you it’s time to say goodbye to the steeped leaves. I hope there will be more, it’s a great late afternoon sip.
